MARKET MEALS
Enjoy the all the fresh veggies! Don't forget to get the perfect wine to serve with your meals.
BEET SALAD
Ingredients: Six red beets, vinegar, one cucumber, parsley.
Cut off the green tops of the beets and save. Boil or steam the beets until tender. Cut into quarters. Cover with vinegar and stand. Chop cucumber and celery. Add to beets.
Sprinkle with finely chopped parsley and serve.
BEANS AND GREENS
Greens, onion, garlic, olive oil, beans
Steam chopped beet greens until bright. Remove and set aside in a bowl. In a cast iron skillet, saute onion and garlic until soft. Add 1 can or 1/2 cup cooked dry beans (cannelloni work well or your favorite white beans). Add greens and saute until well mixed. Remove immediately and serve.
Beef and Pasta Salad with Creamy Garlic Dressing
1 cup dry rotini or similar pasta
1 cup fresh green beans or peas
1 1/2 cups (8 ounces) cooked beef, cut into thin strips
1 medium carrot, shredded
1/2 cup chopped red onion
1/2 cup sliced radishes
1/2 cup mayonnaise
1/2 cup plain yogurt
2 teaspoons white wine vinegar or white vinegar
2 garlic cloves, finely minced
1/2 teaspoon dried Italian seasoning, crushed
1/4 teaspoon salt
1/4 teaspoon dry mustard
1 to 2 tablespoons milk (optional)
- Cook pasta according to package directions, preferably al dente (firm to the bite). Drain; rinse with cold water and drain again.
- Cook the green beans or peas in a small amount of boiling salted water for 20 to 25 minutes or until crisp-tender. Drain; rinse with cold water.
- In a large bowl, combine pasta, green beans, cooked beef, carrot, onion and radishes.
- For dressing, in a small mixing bowl, stir together mayonnaise, yogurt, vinegar, garlic, Italian seasoning, salt and dry mustard. Pour dressing over the pasta mixture. Toss to coat. Cover and chill for 4 to 24 hours.
5. If necessary, stir milk into the pasta mixture before serving. Serve on a bed of salad greens.
Makes 4 servings.

1 cup sugar
1/4 cup shortening
1 egg
1/2 tsp. salt
2 tsp. baking powder
Sprinkle topping over apricots; bake at 350 for 30 minutes.
ROOT BEER FLOATS - Sweet Shack makes delicious home made root beer- just add vanilla ice cream for a delicious and easy dessert.
